There are aromas in Alder firewood which give a fantastic smoky taste


At Falkenberg Salmon Smoke-house we aim to further tradition and know-how. We know how fish should taste and how it should be prepared and preserved by smoking and dry curing.

In order to achieve a good smoky taste, we carefully select alder firewood to use when we smoke our products. Alder firewood is delivered to Falkenberg Salmon Smoke-house as large logs and we chip them ourselves. We do this to extract as much as possible of the aromas and tastes which are naturally present in the wood. This can be compared to grinding coffee. If you grind the coffee beans yourself you get a much fresher coffee with more taste and aroma. When we smoke our fish with alder firewood, there is a lovely thick white smoke, which indicates top quality.

We buy alder firewood locally. Alder is a fast growing deciduous tree that likes a moist growing environment and produces its own nitrogen. It grows in an area up to the middle of Sweden and along the coast of Norrland [in the north of Sweden].
