Herring is purchased during the autumn when the fat content is ideal for smoking. Herring provides vital Omega 3 fatty acids, vitamins B and D, anti-oxidants, proteins and minerals.

Herring and Baltic Herring belong to the same species
The name of the fish depends on where it is caught. If caught north of Blekinge it is called Baltic herring. If caught further south or on the west coast of Sweden it is called herring. It is found swimming in open water from the surface down to a depth of about 250 metres, in shoals that may contain a great number of fish.
The fish is relatively small with a shiny silver colour and a slim body. In our water they grow to about 25-35 cm in length. The lower the salt content, the smaller the fish. Therefore Baltic herrings are often smaller and thinner than herrings.
